Chana Masala Stuffed Butternut Squash
Fall is in the air, which means that healthy comfort food is ready to be eaten! Because we love quick and simple meals here at Chef Soraya, we have made a Stuffed Butternut Squash recipe that we think you will absolutely Fall-- in love with! This dish is not only delicious but completely encompasses the flavors (and colors) of the autumn season. Stuffed Butternut Squash is easy to make, looks beautiful, tastes even better, and is loaded with vitamins and minerals to help keep you healthy! What more could you ask for?
Chef Soraya's Chana Masala Stuffed Butternut Squash
Ingredients
2 Chef Soraya Chana Masala Bowls
1 Butternut Squash
¼ Cup Roasted Cashews
¼ Cup Dried Currants or Raisins
2 Tbsps Olive Oil
Salt & Pepper
Instructions
1). Preheat the oven to 425 degrees F.
2). Halve the butternut squash, scoop out the seeds, drizzle each half with olive oil, and sprinkle with salt & pepper. Then arrange the halves on a baking tray with the cut sides down.
3). Bake for 45-55 minutes, or until the squash is tender.
4). While the squash is in the oven, rehydrate your Chef Soraya Chana Masala Bowl (follow instructions listed on the back of the bowl).
5). Next, put your cashews in a medium skillet over medium heat. Heat cashews until browned and fragrant stirring frequently for about 3 to 5 minutes.
6). Once nuts are browned, chop into small pieces. Then mix nuts, and currants with the rehydrated Chana Masala Bowl.
7). When the butternut squash is finished, let cool for 10 minutes before adding the Chana Masala mixture.
8). Bone Appetite, it's time to eat! These butternut squash “boats” make it easy to eat directly out of, or to scoop perfect portions.
