Chef Soraya Inspired Tacos
Simple Plant-Based Taco Recipe
Never miss out on Taco Tuesday again! Chef Soraya is a great base for a quick and delicious taco recipe. With six global flavors to choose from, your flavor combinations are seemingly endless. For our tacos, we chose the Chile Lime bowl! The added citrus zing from the lime juice powder is what this particular bowl brings to the taco recipe, although any bowl would do the trick. Additional ingredients include soft corn tortillas, spiced sautéed tofu, and collard greens to create a yummy meal that’s good for you too!

When cooking tofu, it’s important to remember to drain the tofu thoroughly before adding it to the pan. Remove the tofu from the packaging and drain excess liquid. Next, place your tofu on a plate lined in a towel to absorb the liquid. Place another plate on top of the tofu and apply pressure with anything you have on hand. Heavy canned goods work wonderfully as weights! Draining the excess moisture in this way will make it easier for the tofu to absorb flavor and cook crispier. Once you have drained your tofu, you can cube it or crumble it, whichever you prefer. We recommend crumbling the tofu in this recipe, making it the consistency of ground beef like you might find in a traditional taco.
Add about 2 tablespoons of olive oil or your preferred oil to your pan at medium heat over the stove. Add your tofu and cook until it beings to brown. Season your tofu during this step to your preferred level of spice. We added a mixture of cumin, coriander, ground red pepper, salt, and pepper. Try sautéing with garlic, onion, and bell pepper, as well, for some added flavor and texture. Set aside your browned tofu and allow it to cool.
Meanwhile, add boiling water to your Chef Soraya Chile Lime bowl, stir, cover, and set aside for ten minutes. Once your bowl is ready, add a scoop to each tortilla. Now top that off with some tofu, and finish with your favorite leafy green. We chose some yummy collard greens that we shredded and sprinkled on top. You can add any number of toppings, maybe some salsa, other fresh veggies, or some vegan cheese! Make this recipe your own!
