Chef Soraya Stuffed Peppers
Chef Soraya is more than just a quick lunch. You can incorporate this protein packed plant-based meal into some of your favorite recipes! The best part is, Chef Soraya does most of the work for you. A great way to utilize the ease of a Chef Soraya Bowl in a full blown recipe is by incorporating it into a classic stuffed pepper. Stuffed peppers are one of those beloved foods that almost everyone is sure to recognize and enjoy. Even better, you can make a big batch of stuffed peppers and take the leftovers to lunch the next day. They reheat well in a microwave or toaster oven.
For this recipe we chose the Chipotle Black Beans and Rice bowl for its spice and its delicious roasted pepper sauce. Plus, it’s 11g of protein strong and perfect for a main dish. To begin, clean and hollow out your bell peppers. You can do this in a number of ways. Some prefer to remove the top of the pepper near the stem, leaving a hollow cup to fill with the rice mixture. We cut our peppers lengthwise, easily removing the stem and seeds without too much hassle. Clean your peppers in whichever way works best for you.
Meanwhile, add boiling water to your Chef Soraya Bowl, stir, cover, and set it aside for ten minutes. Add your peppers to the baking dish and brush them with a little oil before adding the rice mixture. Make sure the peppers are just snug enough in the baking dish to stand upright. Fill your peppers with the rice mixture. It’s ok if they’re a little mounded on the top with the rice mixture. You can add a little bit of water to the baking dish to help to peppers cook thoroughly in the oven. Also drizzle the now filled peppers with a little bit of olive oil. Cover the peppers with aluminum foil and bake for one hour at 325 degrees. Let your peppers cool for 5 minutes or so before serving.
There are lots of ways to change up this recipe and make it your own depending on what you have on hand. For example, you can sauté onions and garlic and add them to the rice mixture. You could even dice up any unused pepper from the cleaning process and add that to the rice mixture as well. Top your peppers with salsa, vegan cheese, or whatever you like! For an added protein boost you can add sautéed tofu to the rice mixture as well. The important part is that Chef Soraya Bowl does most of the work for you by taking an extra step out of the recipe.
