The Super Bowl is coming up quick, and we have a snack that will take you no time at all and will impress all of your guests. They might just tear themselves away from the game long enough for seconds. These homemade macro nachos are plant based, full of flavor, and packed with nutrients. If you’ve never made your own sweet potato chips, you might be surprised at how tasty and delicious they are! Follow our recipe and you might never go back to store bought chips again. All you need for this recipe are sweet potatoes, sliced olives, scallions, jalapenos, avocado, and a Chef Soraya bowl. We recommend the New Mex Chili Lime bowl or the Chipotle Black Bean bowl.
Thinly slice your sweet potatoes using a mandolin. If you don’t have a mandolin on hand, you can thinly slice your potatoes by hand. The thinner the potatoes, the better the crunch. Lightly coat potatoes in the cooking oil of your choice and lightly sprinkle them with salt and pepper. Arrange your sliced potatoes on a sheet tray and try not to overlap the slices. Bake at 450 degrees for about 20 minutes, until the potatoes are crispy and golden brown. Next, remove the potatoes from the oven and add your additional toppings. We recommend that you add your Chef Soraya Bowl first, followed by diced tomatoes, olives, scallions, and jalapenos. Place your sheet tray back in oven for an additional 7 minutes. Remove from oven and top nachos with diced avocado and serve warm.
The homemade sweet potato chips are part of what gives this dish its unique flavor and a nutritional boost.
